Restaurants failed to keep food cold enough (cold holding) in 62–80% of restaurants (FDA 2017–18). So did 70% of retail deli counters - the closest match to a chilled dessert case that inspectors have studied (FDA 2015–16). This rate has stayed about the same for 20+ years of inspection data.

35–64% of restaurants failed to mark expiry dates correctly (FDA 2017–18). So did 52% of delis. UK enforcement: Asda was fined £410k over 62 out-of-date items. An independent store was fined £1,700+ over 14 items - including profiteroles - after one complaint.

#3Making and ordering too much cake and bakery stock
US grocery unsold rates: breads & bakery 3.6%, prepared foods 8.1% (ReFED 2024). UK hospitality wastes 15–18% of food served, compared with 0.44% in managed retail (WRAP). Making too much food alone causes 22% of foodservice waste. Wasted food is worth about twice the profit made on food sales.

#5Chilled and frozen deliveries arriving above safe temperature, accepted unchecked
Nearly 47% of 684 perishable items across 169 shipments arrived above 40°F - some at 75°F (Rutgers study). Across studies of keeping food cold from delivery to the counter (cold chain), 14–58% of recorded temperatures were higher than recommended. 12% of global food production is lost because food isn't kept cold enough from delivery to the counter (IIR).

#6Undeclared allergens - nuts, milk, egg and gluten in cakes and desserts
49.2% of all US food recalls in 2023 were undeclared allergens, up 27% year over year. UK anaphylaxis registry top triggers - tree nuts 26%, milk 20%, egg 12% - match exactly what a cake and pastry counter sells. Typical recall cost is about $10M.

59–69% of restaurants failed to cool food correctly, across four FDA inspection rounds covering 20 years. Custards, cheesecakes and cream fillings need a clear two-stage cooling check.
