Donut Shop Fry Oil Quality & Change Cycle Checklist
You change a Donut Shop's fryer oil when a measured reading tells you to - not just when it looks dark. The reading is the oil breakdown level (total polar materials), checked against your set limit. Measure the oil, don't guess it

2. Throw out the oil at your own action point, a little below the legal maximumLegal limits range from 24% to 27% oil breakdown level, depending on where you trade. In the US, this is not a legal limit - treat it as your own quality benchmark. Changing the oil early protects flavour and keeps you safe from a failed inspection.
3. Log the number of fry cycles (or fry hours) since the last oil change, next to the oil-breakdown readingThese two numbers together tell you exactly when to change the oil, so you can order more in time. Either number alone does not tell you enough to plan with.
Set the change schedule for the oil you actually use
4. Set the time between oil changes by the type of oil, not by the day of the weekDifferent frying fats reach the discard limit at very different times. One fixed schedule for all oils either wastes good oil or serves bad oil.
5. Filter and skim the oil between batches. Remove glaze, sugar and dough bits.Sugar and glaze left in the oil speed up its breakdown. Every crumb left in the fryer burns oil life you already paid for.
6. Keep the frying temperature at 175–190°C (347–374°F). Don't leave the fryer sitting hot and unused between batches.Overheating and leaving the fryer hot for too long shorten oil life and increase acrylamide, a harmful substance, in the fried dough.
Protect quality and cost
7. Top up the fryer to the fill line with fresh oil every dayA fryer that is too low breaks down faster and fries unevenly. Under-filling costs you both oil life and even-cooked donuts.
8. Test again right away after any batch that smoked, foamed a lot, or darkened quicklyFoaming and fast darkening mean the oil broke down suddenly. One bad batch of oil ruins everything fried in it that day.
9. Record every full oil change: date, fryer, cycles run, and the oil-breakdown reading when you threw it outThis log turns oil from an unknown cost into a per-item cost you can lower over time and use to plan your orders.
Frequently asked questions
How often should donut fryer oil be changed?By measuring the oil, not by looking at the calendar. Under controlled heating at 170–190°C (338–374°F), coconut oil reached the 25% polar-compound limit after 48 hours. Palm and canola oil reached it after 81 hours, and soybean oil after more than 90 hours. Using the same schedule for different fats is wrong by about twice as much. In long-running frying at 180–185°C (356–365°F), oils hit 25% at 132 fry cycles (soybean), 138 (palm olein) and 144–146 (palm shortenings). Note those studies used savoury food. Sugar and glaze left behind by doughnuts are not measured in those studies. That is why you test daily and log cycles.
What is the legal limit for frying oil quality?There is no single worldwide standard. Published national oil breakdown level limits run from 24% in Germany, through 25% in Belgium, Brazil, Chile, Costa Rica, Czechia, Finland, France, India, Italy, Poland, Portugal, Spain, Thailand and Turkey, to 27% in Austria, China, the Netherlands and Switzerland, and 30% in Hungary. Japan and South Korea use acid value at 3 or below instead. That list comes from a company, not a government. Confirm your own national rule, then set your own limit a little below it.
How do you test frying oil without a lab?With a handheld TPM meter or a polar-compound test kit. Read and log it once a day for each vat, alongside the cycle count. Peer-reviewed research concludes total polar compounds are a more accurate way to measure when oil is worn out than peroxide value or free fatty acids alone. It matters because guessing fails. Of 100 used oil samples taken from working shops in Thailand, 42 were already at or over the 25% limit while still in use.
