The five rules that protect profit

1. −18°C (0°F) or colder, alwaysHolding freezers hold at −18°C (0°F) or below. Display cabinets run warmer only so the product is soft enough to scoop, and only for as long as the product can handle it.
2. Melted once means written offSoftened or melted-and-refrozen product never goes back into service. Refreezing hides the damage from you, not from the customer.
3. Never empty a top flavourAn empty pan of your number-one flavour is a lost sale and a lost regular. Back it up in the freezer and refill before it bottoms out.
4. Clean scoop, every allergy orderFresh washed scoop, fresh tub surface, and read the allergen chart out loud. The scoop is how contamination spreads (cross-contact route) in this kind of shop.
5. Log it or repeat itTemperatures, dumps and sell-outs captured daily are what stop the same loss - and the same temperature problem (excursion) - happening again tomorrow.
