Eight Chocolatier & Chocolate Shop checks plus a three-times-daily temperature and humidity log, built around the finding that matters most in this segment: it is the cycling, not the heat alone, that blooms chocolate. This checklist logs every area separately - stockroom, counter, window display, gift stand are four different climates - sets 20°C (68°F) as the action threshold and 75% RH as a proven failure condition, and rules out the fridge, because the in-and-out cycle is the damage. It also says plainly what most guides will not: the famous 15–18°C, below-50% RH specification has no standards-body source we could find, so we publish it as a trade rule of thumb and log against it rather than citing it as fact.

Measure the room, not the weather

1. Log the room temperature and humidity three times a day in every storage room, back-of-house area and display area.Humidity causes half of what makes chocolate bloom, and almost nobody measures it. That is exactly why it keeps costing you stock.
2. Use a min/max thermometer-humidity gauge or data logger in each area. Do not use the wall dial or a weather app.A single reading misses the swing between checks, and that swing is what causes the damage.
3. Log each area on its own. The stockroom, counter, window display and gift stand are four different climates.An average for the whole shop hides the one sunny shelf that is quietly turning your bestseller grey.

Stop the temperature swings

4. Never put finished display chocolate in the fridge. If you must use cold storage, keep it sealed and let it warm back up to room temperature in its wrapper.Published guidance is clear that the fridge is not the ideal place for chocolate. Going in and out of the cold is what blooms the surface.
5. Above 20°C (68°F): move the stock or shade it, write down the time, and tell the manager.In an 18-week trial, visible fat bloom began at 20°C. This is a level that calls for action, not just a comfort choice.
6. Above 65% humidity: dry the air out or move the stock. Treat 75% humidity as a proven failure, not just a warning.At 75% humidity with daily temperature swings, milk chocolate reached a Whiteness Index change of 7.9, and a mixed-fat dark sample reached a color change (ΔE) of 23.63, within 55 days.

Protect the stock you already own

7. Do a weekly bloom check. Inspect the oldest case in every area for haze, dull shine and softening, and write down what you find.Bloom builds up over time. The oldest case is your early warning for everything stored behind it.
8. Record every out-of-range excursion. Note how long it lasted, the reading, and which stock was exposed to it.One hot afternoon rarely shows in your stock. Ten of them do. The excursion log is what proves which area is costing you product.

Frequently asked questions

What temperature and humidity should chocolate be stored at?

Honestly: nobody publishes an authoritative number. PeakScale Ops defaults to 15–18°C (59–64°F) and 50% RH as a working band, but we could locate no standards body or trade association source for it - the only published specification we found was 18–20°C (64–68°F) at 60% RH, from an open textbook. What is measured is this: an 18-week trial retained highest quality at 6°C and 12°C (43°F and 54°F), saw visible fat-bloom differences begin at 20°C (68°F), and found 30°C (86°F) extremely unsuitable for every product tested. Set your own band, write it down, and log against it three times a day.

Should chocolate be kept in the fridge?

No - not for display stock. Published storage guidance states directly that the refrigerator is not the ideal place to store chocolate, and here is why: a 55-day study cycling chocolate between 20°C and 29°C (68°F and 84°F) produced intense fat bloom, with visible colour change appearing within 10–20 days on most mixed-fat recipes at 75% relative humidity. Moving product in and out of cold storage is a cycle you are creating on purpose. If cold storage is genuinely unavoidable, keep the product sealed and bring it back to room temperature still in its wrapper.

What causes chocolate to turn white or grey?

Two different defects with two different causes. Fat bloom is a greasy grey film that follows heat and temperature cycling, and at crystal level it is the transition of cocoa butter from Form V - which melts at 33.8°C (92.8°F) and gives chocolate its snap and gloss - to Form VI at 36.3°C (97.3°F). Sugar bloom is a gritty crystalline surface that follows damp. Log which one you found, because the fix is different: fat bloom means fix the temperature cycle, sugar bloom means fix the humidity.
