Chocolatier & Chocolate Shop Checklists

Seven operational Chocolatier & Chocolate Shop checklists for candy shops and confectionery counters - 65 checks covering ambient temperature and humidity control, bloom prevention, tempering quality checks, how long filled chocolates last compared with solid ones, nut and milk cross-contact, net-quantity weighing and the four seasonal peaks. Every check carries a why tied to sales, stock or waste, and every statistic behind them is traceable to a named public source: FDA, CFIA, ECDC, the EU Alert & Cooperation Network, NRF, NCA/Circana, national weights-and-measures regulators and two peer-reviewed bloom studies. Where no published number exists - bloom write-off rates, tempering failure rates, how much seasonal stock sells (sell-through), even a storage rule backed by a published source - we say so instead of inventing one.

Goods-In & ReceivingChocolate is more often damaged before it arrives than spoiled on your shelf. Only accept stock that traveled cool, at a steady temperature, and with the correct label. · 7 checksOpening - Set Up to SellFind out what happened to your stock overnight, sort out any damage, then fill the counter and gift stand before the first customer sees a gap. · 14 checksAmbient Storage - Temperature & HumidityChocolate does not spoil, it slowly gets worse. Hold one steady range, take humidity as seriously as temperature, and stop every source of temperature swings. · 8 checksTempering, Bloom & Shelf LifeSnap and shine come from one crystal form. Prove the temper on every batch, catch bloom while it is still one case, and treat filled pieces as a different product from solid ones. · 9 checksAllergens, Claims & WeighingNuts and milk are the two allergens this business sells the most. Every hand-packed box also carries a legal weight promise. Both need to be checked at the counter. · 9 checksClosing - Capture, Reorder & ProtectRecord the numbers that fix tomorrow and the next busy season. Then leave the stock overnight in conditions you can prove. · 12 checksWeekly ChecksThese checks run once a week, not every day. · 6 checks

The five rules that protect profit

1. Steady beats coldHold one stable ambient band and log it. Cycling - warm afternoon, cool night, in and out of a fridge - is what blooms chocolate, not one warm hour.
2. Bloomed or melted never goes back on displayGrey haze and lost gloss are damage you already paid for. Follow the steps in order - re-melt it for baking, discount it, or write it off - and never put it back out at full price.
3. Dark is not dairy-freeNo free-from, vegan or 'nut-free' claim leaves your counter unless a current spec sheet proves it. Advisory wording is not a control.
4. Declared weight is a promiseEvery hand-packed box, pick-and-mix bag and gift assortment gets weighed against the quantity printed on it. Short measure gets you fined; over-filling means giving away profit.
5. Log it or repeat itAmbient temperature, humidity, bloom write-offs and how much seasonal stock sells, logged daily, are what stop the same loss - and the same missed peak - next season.
