Records & documentation

People, training & suppliers
9. Audit the approved-supplier register: every food/beverage supplier has a valid FSSAI licence or registration on file; remove lapsed suppliers.Required under Schedule IV – sourcing from licensed suppliers. 16. Track open regulatory findings: any improvement notice, suspension condition or inspection observation has an owner, deadline and evidence of closure.Required under FSS Act – improvement notices (s.32). Enforcement precedent: Suspensions lifted only on proof of rectification (Maharashtra FDA).
17. Confirm thermometers, scales and probes are calibrated per schedule with certificates on file.Recommended practice - Good practice supporting temperature-control compliance. Enforcement precedent: Temperature-control failures underlie spoilage findings.
18. If the outlet is within 50 m of a school: no HFSS (high fat/sugar/salt) items sold or advertised; school-canteen clients hold their own licences.Required under FSS (Safe Food and Balanced Diets for School Children) Regulations 2020; Maharashtra FDA order 29 Jul 2026. 21. Review wastage and discard trends compared with prior months; investigate recurring spoilage causes (over-ordering, equipment, supplier).Recommended practice - Operational control supporting unsafe-food prevention.
