FSSAI Weekly Walkthrough Checklist
The weekly walkthrough catches what a shift can't. It covers labelling and date-marking compliance. It also covers food-grade packaging (a 4-point critical item in FSSAI's checklist) and menu claims. Temperature, equipment & infrastructure
1. Deep-check dry stores: stock on racks/pallets off the floor and clear of walls, oldest stock visibly rotated to the front (FIFO), no bulging, rusted or dented cans, no torn sacks open to air.Required under Schedule IV – storage practices. 2. 5. Inspect utensils and equipment for corrosion, chipping, cracked boards or non-food-grade repairs; remove failed items from service.Required under Schedule IV – equipment standards. Enforcement precedent: Equipment condition part of hygiene findings.
Labelling, packaging & menu claims
6. Spot-check packaged and repacked items for compliant labels: product name, ingredients, allergens, dates, batch and FSSAI licence number present and legible.Required under FSS (Labelling & Display) Regulations 2020. 7. Spot-check the menu against what is actually served: veg/non-veg marks correct, no claim of fresh for frozen, weights/portions as stated, no unsubstantiated health claims.Required under FSS (Advertising & Claims) Regulations 2018; Maharashtra FDA directive on misleading menus. Suppliers, stock & storage
9. Verify packaging and takeaway containers in use are food-grade; supplier conformity certificate available on request. No newspaper or non-food-grade plastic in contact with food.Required under FSS (Packaging) Regulations 2018; FSSAI revised inspection checklist treats food-grade packaging as critical. 10. 12. Sweep premises for banned or prohibited goods: no gutkha, pan masala or unapproved additives anywhere on site, including staff areas.State FDA directive adopted as common practice - State prohibition notifications (in force in most states); FSS Act 2006. Premises, water & pest control
14. Inspect all bait stations, traps and insectocutors: intact, correctly placed, no activity; log findings and escalate any activity to the pest contractor within 24 hours.Required under Schedule IV – pest control programme. Enforcement precedent: Infestations found where routine checks lapsed (Punjab Grill, CCI).
15. Confirm the pest-control contract is with a licensed operator and the latest service report is on file and actioned.Required under Schedule IV; FSSAI guidance on approved pest operators. Enforcement precedent: Maharashtra FDA directive requires licensed pest operators.
16. Audit the week's signed cleaning logs and spot-check hard-to-reach areas: hood filters, under and behind equipment, ceiling corners, store-room floors.Required under Schedule IV – cleaning schedule. Enforcement precedent: Dirty, deteriorating kitchen areas cited at Mumbai clubs.
17. Confirm cleaning chemicals are stored in a dedicated area away from food, in original labelled containers, with dilution instructions available.Required under Schedule IV – chemical storage. Enforcement precedent: General sanitation grounds in Pune suspensions.
18. Verify potable water source integrity: filter/RO service within due date, tank lids secure, no visible contamination at outlets.Required under Schedule IV – potable water. Enforcement precedent: Water safety part of Maharashtra directive set.
19. Review the week's temperature logs: complete, signed, and every out-of-range reading has a recorded corrective action.Required under Schedule IV – record keeping. Enforcement precedent: Absence of mandatory records cited at Punjab Grill.
20. Review the discard/wastage log: expired and spoiled items recorded with quantity and reason; unexplained gaps investigated.Recommended practice - Supports FSS Act unsafe-food compliance. Enforcement precedent: Expired stock findings across all three cities.

Breaching standing FDA directives: cooking-oil reuse, packaging, water, misleading menusMaharashtra FDA issued several 2026 directives. What does FSSAI require for food packaging and labelling?Food-contact packaging must be food-grade. FSSAI's checklist revision made this a critical, 4-point item. What should I check about suppliers under FSSAI?Every supplier must hold a valid FSSAI licence or registration. Deliveries must carry compliant labels and dates. No banned goods can enter the premises. Pune's 2026 rounds show the stakes. Banned gutkha/pan masala led to FIRs and arrests, not just notices. The single sourced round, 21–22 July, produced 3 FIRs, 10 arrests and 11 vehicles seized across the division. Separately, about ₹54 lakh of goods was seized across the July suspension rounds (₹50.65 lakh plus ₹3.48 lakh). The two figures cover different rounds, so they do not add up to one total.
