Quarterly, walk the full premises with the same lens an auditor uses. Score every item honestly. Treat any critical gap as a same-period fix. Then file the completed audit. A documented self-audit trail itself demonstrates a functioning food safety system at inspection.
A single critical failure. It caps your grade no matter how strong the rest of the audit is. In 2026 enforcement, the recurring critical territory was clear. It included no valid licence, pest infestation, expired stock, and food not kept cold all the way through (cold chain). Those four areas deserve disproportionate attention in every self-audit.
